A note on the sugarcane decaf process:
Sugarcane decaffeination utilises a naturally occurring compound, ethyl acetate, to decaffeinate coffee. The process is relatively simple: during fermentation of the sugar cane, ethyl acetate bonds to chlorogenic acids found in caffeine and the separation of caffeine from the coffee bean begins, whilst leaving most of the other flavour compounds.
